Paleo Pumpkin Pancakes 

Paleo Pumpkin Chocolate Pancakes

An easy grain free pancake that you can throw together any day of the week! 

Ingredients

  • 1 cup almond meal
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted I used Barlean’s butter flavored
  • 1/2 cup almond milk
  • 1/2 cup pumpkin purée
  • 3 tbsp collagen peptides I used Orgain’s
  • 2 tsp baking powder
  • 4 large eggs
  • 2 tbsp cocoa powder
  • 1 tsp pumpkin pie spice
  • 1/2 cup bittersweet dark chocolate, chopped I used Divine’s 100% chocolate
  • 1/4 cup maple syrup Optional, if you’re on Keto, feel free to leave this out
  • 1 tbsp Pumpkin shaped sprinkles I used Sprinkle Pop’s!

Instructions

  1. Preheat a large cast iron skillet over medium low heat

  2. Melt a tablespoon or two of coconut oil in bottom of the pan

  3. Combine all ingredients together in a large mixing bowl. Add chocolate and sprinkles in last. 

  4. Pour 1/8 cup sized dollops of batter into preheated skillet and cook 3-5 minutes or until golden brown. Fill over and cook an additional 1-2 minutes. 

  5. Remove from pan and replace with more batter. Repeat until all batter has been used. Top pancakes with butter and maple syrup as desired. Serve hot.
